(If, upon checking in, you decide to cancel all plans, throw on the fluffy white hooded terry-cloth robe and order oysters, Quebecois cheese, and a bottle of Bourgogne Chablis from the all-day room service menu, we won’t judge).

Rubbing elbows with locals on the terrace is so much more enjoyable when said locals are sipping wines expertly selected by star sommelier Philippe Poitras—exceedingly rare bottles among them. “What,” you ask the waiter, “pairs well with lobster risotto in lime oil?” As the lowering sun casts everyone in a captivating glow, you decide to go for bubbly. Tonight is worth celebrating.
